I sometimes post stuff on my Gemini blog. Can't guarantee "cool" or "new" but it sure is something.
Here is a post I am particularly proud of gemini://gemlog.blue/users/Blackwood/1643861451.gmi
Here is the landing page for the blog gemini://gemlog.blue/users/Blackwood/1643718059.gmi
I recently found out this via mastodon

Recently I've discovered that (a few people actually) have ported lists of all of the IETF's RFCs to gemini, which it's pretty damn interesting to read documents from when the internet was in its infancy over an extremely new protocol.

Edit: Looking into it a tad further, it would appear that the guy has written some RFC's himself, which is pretty damn cool.
I found a nice capsule where the author publishes quarterly lo-fi/hip-hop/ambient mix tapes that I find pretty good:

I used to be into web browsers a little bit. I have no idea what the various Gemini browsers are like. Here's one of them.

This browser looks quite nice, there is also lagrange, amfora, and my
favourite elpher :) btw, thelambdalab capsule is quite cool in general.
